Ingredients
250g caster sugar
170g honey
1 tbls baking soda
Directions
- In a large saucepan, combine honey and sugar, stirring with a silicon spatula over low heat until the sugar is dissolved.
- Increase heat to medium and continue stirring until the mixture becomes caramelized and achieves a golden brown colour.
- Remove saucepan from heat and carefully stir in the baking soda, this will cause the mixture to foam quickly.
- Pour mixture into a deep lined slice tray and allow to cool and harden completely (about an hour), before breaking into pieces.
- Store in an airtight container.
