The Vandemonian autumn with its lowering sun and shortening days is when our forest giants come out to play – play the reproductive games! Only possible to see from a distance due to their height (these are the tallest flowering tress on Earth) they yield a dark and mysterious nectar that our bees use to create the Eucalyptus honey.

Gathered from Southeast Tasmania the Eucalyptus honey has a primal earthy depth and complexity, malty and bittersweet with woody tannin notes.
