Candied Manuka honey
Tasmanian Manuka honey is collected from the Tasmanian tea tree, Leptospermum scoparium.
Methylglyoxal (MGO) is the naturally occurring compound that makes Manuka honey unique. It is an antibacterial compound that specifically targets bacteria.
The MGO rating is the measurement of methylglyoxal in each batch of honey produced. For example, 100+ MGO has been tested in a certified laboratory and contains a minimum result of 100mg methylglyoxal per kilo of honey.

With its strong medicinal flavour, Manuka honey can be quite divisive. Ideally eaten on its own for antibacterial purposes or mixed in a marinade.
