Sticky Honey Buns

Ingredients

  • Dough
  • 1/3 cup milk
    1/3 cup butter
    2 tbs honey
    3 1/2 tsp instant yeast
    3/4 cup warm water
    3 cups all-purpose flour
    1.2 tsp salt

  • Filling
  • 3/4 cup brown sugar
    4 tbs butter
    3 tsp honey
    1 tsp vanilla
    1/2 tsp cinnamon

  • Icing
  • 1 tbs butter
    1 cup icing sugar
    1 tbs honey
    pinch salt (optional)

Directions

  • Dough
  • Line and grease a 9 x 13 inch baking dish with parchment paper.
  • Melt butter and milk together in a small saucepan or Thermomix to around 35 – 40 degrees Celcius. Then pour into mixing bowl.
  • To your milk mixture, add honey, warm water and yeast and mix on low speed until combined.
  • Add half of your flour (1 1/2 cups) plus salt and mix with dough hooks or dough setting on Thermomix for 1 minute.
  • While mixer is still going gradullay add remeining flour until combined (around 1 1/2 mins)
  • Knead on low for a further 2 minutes or until dough is smooth but not sticky to touch. You can add a touch more flour if too sticky or a drop of milk if too dry.
  • Place dough in a large greased bowl. Cover with a clean, dry tea towel and place in a warm spot to let rise for around 1 hour.
  • Filling
  • While your dough is rising you can prepare the filling by adding all ingredients to a bowl and mixing until well combined.
  • Assembling the buns
  • Once your dough has risen, turn your dough onto a clean, floured bench and roll into a 16 x 12 inch rectangle.
  • Spread filling over your dough evenly.
  • Gently roll dough lengthwise and pinch to seal.
  • Using a serated knife cut roll into 12 even scrolls and place in prepared baking dish. Make sure they are not touching to allow for more room to rise. Cover again with a clean, dry tea towel and place in a warm spot for another 40 – 60 mins. After this your buns should now be slightly touching.
  • Preheat oven to 180 degrees Celcius
  • Bake for around 20 minutes or until golden brown.
  • Remove from oven and let cool for aound 5 – 10 minutes. While waiting, prepare your icing.
  • Icing
  • Combine together icing ingredients and pour/spread over buns. This works best if they are still warm as the icing will seep into the top of the buns and add even more deliciousness!
  • Aloow to set for another 10 minutes.
