Our favourite ‘home’ apiary honey, unique and inspirational in its crystallising nature. It is the ‘mother’ of the special texture we give to all our honeys, firm and soft, solid and smooth. Its flavour is best described as soft and mellow with marzipan tones. As if it were a herald of our antipodean summer Christmas, the “Bursaria’ erupts with millions of tiny white flowers in the shape of a bursting star – this is our Christmas Bush!
